I stumbled upon the most delicious pumpkin treat on Monday night. A friend of mine in my bible study made these pumpkin chocolate chip cookies and I knew I had to share the recipe with everyone! They are so simple but impressive. Just the way I like my recipes. They do not look very appetizing but, trust me they are good! Recipe below:
- -One banana (still a little green)
- 2 tablespoons of pumpkin
- 4 tablespoons of natural peanut butter (you can use non-natural as well)
- 1/4 C. of dark chocolate chips.
- Spoon in 1 tablespoon of mix onto baking sheet (use coconut oil if needed to grease the pan)
- Bake on 350 for 12-14 minutes
- Yields about 10 cookies
So simple, right? A perfect fall treat. Speaking of simple, happy feast day St. Therese! I really appreciate St. Therese and her simple way of life. After praying her novena I feel compelled to start doing small things with great love. Whether that be to make cookies and bring them to a neighbor or offer to watch a friends child so they can run errands...it is the small things in life that make a big difference. Plus, this kind of behavior will hopefully rub off on your kids. Or at least that is my hope! So, let us pray for the intercession of St.Therese today. I pray that she may help us see the joy in the little things of life and that it would be the little things that compel us to do GREAT things for people here on earth! Another prayer for you today:
O little St. Theresa of the Child Jesus, who during your short life on earth became a mirror of angelic purity, of love strong as death, and of wholehearted abandonment to God, now that you rejoice in the reward of your virtues, cast a glance of pity on me as I leave all things in your hands. Make my troubles your own - speak a word for me to our Lady Immaculate, whose flower of special love you were - to that Queen of heaven "who smiled on you at the dawn of life." Beg her as the Queen of the heart of Jesus to obtain for me by her powerful intercession, the grace I yearn for so ardently at this moment, and that she join with it a blessing that may strengthen me during life. Defend me at the hour of death, and lead me straight on to a happy eternity.
